- Prepare 350 g of turkey thigh mince.

Heat the oil in a large, deep pan or casserole dish over a medium heat and add the onion, celery and chilli. Using ground turkey, canned kidney beans, and plenty of seasonings gives this simple and surprisingly light chili plenty of flavor. This chili was perfect for a cold night. - Add tomatoes and beans as well as approx 150ml water. Mix well and bring to the boil..
- Add herbs and spices. Lower the heat, cover and allow to simmer for 10 minutes..
- Add mushrooms and simmer for a further 10 minutes..
- Season to taste with salt and pepper. Serve with your favourite rice..
I didn't mash the kidney beans and added a can of black beans and corn. Great for batch cooking as the flavour enhances on a reheat. I use frozen veg too, which makes this an incredibly cheap but nutritious meal.
